Benefits of celery
Several epidemiological studies have shown that a high consumption of fruits and vegetables reduces the risk of cardiovasculaires12 disease, certain cancers13 chroniques1,2,14 and other diseases. The presence of antioxidants in fruits and vegetables may play a role in this protection.Cancer. Certain compounds contained in celery (polyacetylenes) have the ability to inhibit in vitro the proliferation of several types of cancer cells humaines3. Celery seeds also showed a protective effect against the formation of cancerous cells to the liver in animal4. Because this research used concentrated extracts, the question remains whether the consumption of celery or seeds in their natural state can provide the same effect. Another study showed that intake of lutein from the celery consumption decreased the likelihood of colon cancer diagnosed before age 67 years.5.

CéleriLe celery leaves as the seeds, contains certain types of polyacetylenes in significant quantities. Previously it was believed that these bioactive compounds were harmful.However, studies have shown that certain polyacetylenes have anti-inflammatory and antibacterial effects in addition to preventing the proliferation of cancer cells in vitro16. Fennel also contains polyacetylenes. The concentration of these compounds in the fennel is however minor compared to that of parsley and céleri17. The effects could provide polyacetylenes in humans when consuming fennel remain unproven.
Celery seeds also contain the apigénine15, an antioxidant having anticancer effects. Celery also provide an important dietary lutein, an antioxidant of the carotenoid family.
